Helen Saul has spent time in both the Yucatan and Oaxaca Mexico studying and becoming familiar with the cooking of the regions. She hopes you will enjoy being introduced to these exciting cuisines.
The cooking of regional America continues to be a fascinating exploration and we will be offering classes in both the Native and New cuisine of the Southwest. We have also been exploring the historical menus and recipes of the Grand Cuisine of the turn of the 19th century and will offer some very exciting classes in what are the roots of contemporary American cooking.
All Classes are limited to eight students and are hands on. Every one cooks.
CONTEMPORARY NEW ORLEANS You will learn how New Orleans chefs are recreating traditional cajun/creole classics. This is bold, creative cooking.
THE FRENCH VEGETARIAN Unusual dishes from the traditional cooking of France. This is wonderful vegetarian food that is exciting to eat. With wines that go well with vegetarian cuisine.
SOUTHWEST VEGETARIAN - Learn how to prepare vegetarian food that is both delicious and utilizes native Southwest ingredients. We will include cactus and acorn and more.
Home of the Seven Moles and one of the best cuisines in North America. Special techniques, a classic mole negro and a traditional Oaxacan meal.
THE MAYAN KITCHEN
The food of Yucatan Mexico is quite different from that of the rest of Mexico. We will introduce you to the special ingredients and cooking methods of this not hot cuisine.
THE SILK ROAD
A trip into a gourmet mecca of traditional Middle Eastern cooking, especially of Persia and Afghanistan. This food is certain to become a part of your regular menu planning. Including great vegetarian food.
THE THRIFTY GOURMET - Creative and delicious meals on a budget come from various regions. We will explore these and create a wonderful low-cost dinner you could even serve to guests. You will go home with many new ideas for great food on a budget.
